ကင္မ္ခ်ိ- ကိုးရီးယားမုန္ညင္းခ်ဥ္






ဒီေန႔ေတာ႕ ကိုးရီးယားစာ ကင္မ္ခ်ိ (Kimchi) လုပ္နည္းရယ္ ... Kimchi Soup ခ်က္နည္းရယ္ ေၿပာၿပပါမယ္ ... ကိုးရီးယားမံုညင္းခ်ဥ္ပါ ။

လိုအပ္တဲ႕ ပစၥည္းေတြက
၁။Korean Cabbage/ Chinese Cabbage လို႕ေခၚတဲ႕ ၿမန္မာလို အိုးရွင္းထုပ္ တစ္၀က္ေလာက္
၂။ မံုလာဥနီ သို႕ အၿဖူ ဥၾကီးတစ္စိတ္ေလာက္။
၃။ ၾကက္သြန္ၿမိတ္ လက္တစ္ဆုတ္စာေလာက္။

မံုလာထုတ္ကို ၂ရက္ေလာက္ေရခဲေသတၱာထဲမထည္႕ပဲ အရြက္မ်ားကိုၿဖန္႕ၿပီးေၿခာက္ေအာင္ အၿပင္မွာထားပါ။ ဆားစိမ္ခါနီးမွ တစ္လက္မေလာက္စီဒါးနဲ႕ၿဖတ္ ထားပါ။ ဇလံုၾကီးၾကီးတစ္လံုးထဲကို ဆား၂ဇြန္းေလာက္ရယ္ ေရ မံုလာရြက္ၿမဳတ္ရံုထည္႕ေမႊပါ။ ဆားေပ်ာ္ရင္ မံုလာရြက္လွီးထားတာေတြ တစ္နာရီခန္႔ စိမ္ထားပါ။ ၿပီးရင္ ေရႏွစ္ထပ္ေလာက္ေဆးၿပီး စကာနဲ႕ ေရေၿခာက္ေအာင္ တစ္နာရီေလာက္စစ္ထားပါ။(မံုလာရြက္က ဆားရည္စုတ္ၿပီးၿဖစ္ပါတယ္ ... ေရေဆးလို႔ ဆားရည္ေတြထြက္သြားမွာ မစိုးရိမ္ရပါ)

မံုလာဥကိုလည္း အခြံသင္ တစ္လက္မခဲြအရွည္ေလာက္ ပါးပါးေသးေသးေလးေတြလွီးထားပါ။ ၾကက္သြန္မိတ္ကိုလည္း လက္တစ္ညိဳးစာ အရြယ္ၿဖတ္ထားပါ။

ိိနယ္ဖို႕ ကင္ခ်ိအႏွစ္အတြက္
၁။ ဂ်င္း လက္မအရြယ္ ၄ခု အခြံသင္ထားပါ။
၂။ၾကက္သြန္ၿဖူ ဥၾကီးတစ္ဥ(၈မႊာေလာက္) အခြံႏႊာထားပါ။
၃။ ၾကက္သြန္နီတစ္ဥပါးပါးလွီးၿပီး ၾကိတ္ထားပါ။
၄။ ငရုပ္သီးအေရာင္တင္မွုန္႔ညက္ညက္ ၃ဇြန္း။
၅။ သၾကား၂ဇြန္း
၆။ ငံၿပာရည္၂ဇြန္း
၇။ ဆန္မွုန္႔တစ္ဇြန္းေမာက္ေမာက္ကို ေရ ၃-၄ဆထည္႔ၿပီး မပ်စ္မက်ဲက်ိဳထားပါ။

ဂ်င္းၾကက္သြန္ၿဖဴကိုေရာ ညက္ေနေအာင္ေထာင္းၿပီး အထက္ပါအားလံုးကို သမေအာင္ ဇြန္းႏွင္႔ေမႊပါ။
လက္နဲ႕ေမႊမယ္ဆိုရင္ေတာ႕ လက္အိပ္စြတ္လုပ္ရင္ပိုေကာင္းပါတယ္ ... လက္နဲ႕ထိရင္သိုးတတ္ၿပီး ၾကာရွည္မခံပါ။

ကင္ခ်ီးအႏွစ္ရယ္ ၊မံုလာရြက္ေရစစ္ထားတာရယ္၊ ၾကက္သြန္ၿမိတ္၊ မံုလာဥလွီးထားတာတို႕ကို ဇလံုတစ္ခုထဲထည္႕ သမေအာင္ဇြန္းနဲ႕နာနာေမႊေပးၿပီး ပလပ္စတစ္ပံုးထဲထည္႕ အဖံုးအုပ္ၿပီး အၿပင္မွာထားပါ။ ေနာက္တစ္ရက္၂ရက္ဆို ခ်ဥ္ပါၿပီ။ ခ်ဥ္သြားၿပီဆို ေရခဲေသတၱာထဲေၿပာင္းထည္႕ပါ။
ေရရွည္ခံလိုရင္ လက္ႏွင္႔မခပ္ပါႏွင္႕။ ဇြန္းႏွင္႕သာေကာ္ပါ။

  1. မိၿပီလူညာ... ခင္ဗ်ားေၿပာတာေတြ တစ္ခုမွမဟုတ္ဘူး...က်ဳပ္ကိုညာလို႔မရဘူး..ခင္ဗ်ားကိုဘယ္ကိုလီးယားမ်ား ဒီလိုသင္လဲ...အေခၚအေ၀ၚလဲမွားေနတယ္ဗ်...ကင္ခ်ီးမဟုတ္ပါဘူး..ကင္းမ္ခ်ီပါ..ခင္ဗ်ားလုပ္မွပဲ ခ်ီးကင္စားရမလိုၿဖစ္ေနၿပီ...KIMCHI...OKey, lernt more if you want to teach people,..u must be very sure first,..LOL

  2. for making KIMCHI, There is No ONION, NO FISH SAUCE, NO SUGAR, NO RICE POWDER,..I'll show you
    1. The Chinese garbage is required to soak in the salted water for at least FIVE-SIX HOURS together with Radish,..
    2. Throw away those salted water and keep the vegi till there is no water hidden in between the leafs.
    3. Cut into size as you wish,
    4. During the time you soak the vegi, the ingredient should prepare as follow:
    a) Spring Onion,
    b) Garlic
    c) Red Chilli ( Just for Color and to get Spice)
    d) Ginger
    e) Black papper
    f) Ajinomoto ( If you wsih-optional)
    i) Sesame Oil & Sesame Seed
    j) All Blend together without sesame oil,..
    everything is being prepared, now you can mixed with those you had cut just now,..
    You can keep inside the freeze after it has been mixed,
    You can taste it even after ONE DAY LATER,..
    I dare to BET you,.. even can touch by hand, keep how long you want,..YOU DARE TO BET ME?

  3. Please don't make people to misunderstand my post. I have tried several times kimchi by this method and it is very good. You can see in google how to make kimchi, most of people use fish sauce and anion. I don't understand why you say such rude comment and wrong information.   4. Yes, the cooking ways are different from each.. Please do not give such rude comments cos this blogger is not earning money from this recipe. She is just sharing her recipes that she thinks fine. If you don't like it, don't come here... And also the one called 'MMR Marine' I don't know how you are doing your business there. I have so many Korean friends. They also add fish sauce, sugar and onion.. Please act like a adult and think twice before you talk....

  5. I have been watching this MMR Whatever's comments. Why would he come and read this blog if he thinks there is no benefit to him? Wow.. a proof of such no life, low life & jealous people exist. Here is something for you to practice from tomorrow but not to come back and use it here. If you have nothing nice to say "say nothing". Grow up & make sure your brains grow up from the size of a pea.
